G'day TexMex
Fantastic recieps - thankyou. I tried the Pork Rinds & Eggs and loved it.
I'm a '68 baby as well. Did you know that Mark Kurlanksy (Food historian/writer) wrote a book called 1968 because so much happened in that year ?
Cheers
Nigel

Glad you enjoyed the Mexican Arracheras. Yes, pico de gallo is a great salsa to use with the dish. Also try slicing the cooked skirt steak very thin and using a flour tortilla, spread with guacamole, roll up with the meat and pico de gallo for an awesome taco.
