The Celiac diet has been a helpful hand with Autism, but there is so much more out there than people need to learn who are catering to this diet. I have used it to make waffles, pancakes and corn bread.. All of those have come out with the taste and texture of the wheat versions.. if I don't tell people the don't know the difference.. I have other mixes that are used for yeast breads but I have not tried them yet.. I would be glad to post them if you are interested.. Can you use yeast? I have read that the Celiac diet has been helpful with Autism.
