    I made Pecan Joys yesterday and am very sorry to say that I was disappointed with the finished product. Although they tasted great with the chocolate, coconut, pecan combination, the texture did not turn out like a chewy bar cookie. They were very crumbly and just fell apart when I tried to cut them. It seems like there are not enough “wet” ingredients in this recipe. Even when I was mixing it, it was dry and not forming a dough. I added a little milk, but apparently not enough. I’m not giving up, though. I really want this recipe to work because it’s so simple and so tasty. Next time I may try mixing the cake mix with the wet ingredients thoroughly before adding the nuts and chocolate. Does anyone have suggestions for how to make this turn out better?

    I did make these the other day, I will post a blog on them soon ( I substituted some ingredients and "created" a cake mix from a cake recipe. If you're interested in the results, please take a look, the post will hopefully be up tomorrow or Saturday. :) Thanks for a tasty different recipe!

    For the cranberry nut bread I would use fresh (cooked), but you can use dry as long as you rehydrate them. You could even use "Crasins" if you wanted too actually. The make Crasins with Orange now too.

    Hello and thanks for the comment on the Eggplant Lasagna¡¡ you´re so kind... Have to take a look to your pages, since I´m always interested in new recipes. Go for it with quilting¡¡ it´s so interesting and gives a lot of satisfaction and good moments of sharing ideas with quilting friends. I started quilting 8 years ago, and I´m always learning wonderful things from others.
