  • DebStrate 2 years ago about Blueberry Oat Scones
I too tried this and used fresh blueberries - mmm mmm mmm - scrump-deli-icious! My mods to the Norther Oats Steel Cut Oats recipe on the box were all healthy replacements. No additions or changes to any amounts. I used whole wheat flour, coconut sugar and unsweetened vanilla almond milk. Next time I'm going to try buckwheat honey (because bw honey "should be a part of every winter medicine cabinet,” says Dr. Bhatia “it’s high in antioxidants and it really has a lot of immune boosting properties". tf it doesn't work well I'll go back to the coconut sugar cause I've tested that now and I know it's yummy (Dr. Oz says coconut sugar is a better choice than refined sugar because it doesn't spike your blood sugar level). I might try my hand at a combination of coconut sugar and bw honey or maybe... make the scones with coconut sugar and serve them up warm with yummy bw honey. Another mod I will try in the future is swapping out the butter for coconut oil (conventional thought used to consider fats like coconut oil to be unhealthy and contribute to heart disease. We now know that this isn’t true. In fact, coconut oil is actually a heart healthy food that can keep your body running smoother in a few different ways. Coconut oil is known to boost metabolism which is great for weight mgmt; it's also great for your thyroid, blood sugar mgmt, digestive system and an added benefit is that it is really good for your skin. Works wonders in pancakes so thought it might work here. It's worth a try in my opinion. Happy guilt free baking, eating and sharing everyone : )

Hi! Thanks for the post on my Maple Walnut Oatmeal Whoopie Pies - sorry it took me a while to respond! But I just used regular Crisco for the shortening. Next time I might try butter-flavored. I'm not sure I was thrilled with the way it came out using plain! Thanks again for checking out my recipe!
