About me
I have recently been diagnosed with celiac disease after a long haul and several wrong turns. As a result, I have had to eliminate wheat and gluten from my diet. I am now learning to convert "normal" recipes to GF, what to substitute for what and trying to come up with palatable alternatives. Also learning how and where wheat derivatives are hidden in products and lables has been an experience. It is kind of like when I was trying to diet and realized that when they reduce fat, thet add sugar and vice versa or increase sodium. Homemade is the safest.
