Vik, if you try the salt and pepper shrimp without the shells, you might experience a whole lot more heat than anticipated. The shell is a little insurance against over burn. I'd possibly cut down on the hot stuff if I used the recipe with peeled shrimp. As we say down south, "Suck 'em, peel 'em and eat 'em" Let the good times roll.
