    Hope you enjoy the creole egg casserole. It's a great dish and pais well witht the stovetop cheese grits recipe. I nver bake my cheese grits, just a step that is not needed. And speaking of rural, we also live "in the county." I just got finished tilling my garden and the tomatoes, bell peppers, squash and other stuff is mostly in the ground. Blueberries are just around the corner and looks like a good crop. You'll love teh grits. Take a look at the cornbread salad, also.
