Carribean-style Black-eyed Peas

This has quickly become a favorite. I make it a couple times a month. I tried using dried black-eyed peas in the crockpot after soaking them overnight and it didn't work at all; when the beans were finally "done" everything else was close to burnt. But I have successfully used dried peas, cooked them for a couple hours on the stove top and then in he crockpot. And of course, three cans of the stuff works just as well. =P

Mexican Black-Eyed Peas

In the south it is considered good luck to eat black-eyed peas on New Year's Day. When we lived in Maryland, I started serving them this way and with barbequed ribs and coleslaw. Kinda the southern version of Pittsburgh pork and sauerkraut, I guess. These are REALLY good! Almost like a chili.

Hoppin John

A simple presentation from Bill Neal's Southern Cooking (1985). Good for anytime when a wholesome one dish meal is wanted (except for the rice-I highly recommend electric rice cookers for all occasions).
