Crispy Sour Cream Chicken Tenders

I hadn’t made this in years, but when I came across the recipe (it was dated 1984) I recalled how much we all liked this “finger food”. So I pulled out the frying pan, heated up the butter and oil, dipped some chicken strips that I had in the freezer, and fried up a batch…for once, my memory was right on! These are quick and easy, good with BBQ sauce or ranch dip (a spicy southwestern ranch would be good, too) or hot sauce or honey mustard sauce made with mayonnaise (my favorite) – whatever floats your boat. I didn’t regret finding that oldie but goodie recipe! Use any leftovers to make a tasty sandwich wrap the next day…I used a little Caesar dressing and some crispy romaine – delish.

Beef Carpacio

Raw beef sliced paper thin and dressed with olive oil and capers, or mayonnaise, created in the 1950s at Harry's Bar in Venice as an antipasto named after the Venetian artist Vittore Carpaccio, to commemorate an exhibition of his works taking place in Venice at the time.

Shrimp Scampi

Oh how my honey and I love Shrimp Scampi. We don’t eat it often. But it’s a treat for us. A bottle of wine, fresh loaf of bread to soak up the juice and some times we eat this over pasta. So easy to make and eat! I love making seafood. So fresh and so easy to make, we have my son to thank for that. He would go to the Philly markets and bring back the BIGGEST shrimp you ever saw (huge)!!

New QuotNewquot Potato Salad

Potato salad done different, kind of greek, love it with poached shrimp and a tender bibb lettuce underneath. Throw in a few roasted beets, pepperoncini and some green peppers and you could call it kind of a Louis Pappas' greek salad.
