Seitanic Baked Balls

A vegan, tofu free way of making deliciously chewy "meatballs" for spaghetti or appetizers! These freeze very well after baking too, and even work wonders in the crockpot for "cocktail meatballs". Adapted from Bryanna Clark Grogan. Makes about 4 cups (raw) seitan.

Neerday Steak Pie

The way we dine on Ne'erday (New Year's Day) in Scotland! We usually buy these from the butcher's - at least, from those who are still allowed to make their own pies on the premises. Bought pies usually come in the familiar foil dish we call an 'ashet', (from the French word 'assiette' for 'plate'), usually without pastry on the bottom, but just the meat and gravy topped with (usually) a puff pastry lid. The trouble is, you can't be sure what you're getting in terms of meat content. The only way to be sure is to make your own at home, using good-quality beef. It's all right to use ready-made pastry, if you haven't the time or inclination to make your own.
Traditionally a Scottish steak pie contains only beef and gravy, but the pie police won't arrest you if you add mushrooms and/or kidney! But then it won't be Scottish! I've added some of these variations below. Heavily adapted from several recipes, notably those of Alastair Hendy and Delia Smith.

Mizz Rs Big Bad Christmas Cake

I made my dad one of his favourite Christmas confections - fruitcake - out of another one of his favourites - home made mincemeat! This sucker took up a whole 10" springform with barely any room to spare, and clocked in at just over 6 lbs. It's a combination of two recipes from historic Toronto Star clipouts! Mizz R, if you're wondering by the way, is me! The mincemeat recipe is also on this site: http://www.grouprecipes.com/107940/mizz-rs-big-bad-mincemeat.html

Mizz Rs Big Bad Mincemeat

This vegan mincemeat mixture was originally made for my Big Bad Christmas Cake this year, but it can also be used for several pies, it makes about 5 cups but you'll only need 3 cups for the cake (if you choose to make it) and the remainders keep very well.

Rays Cafe Seafood Margarita

One of my favorite places located in Laguna Beach is Las Brisas. There I can pass the time away chomping down on cervice and drinking Cadillac Margaritas with a Gran Marnier chaser.

This resembles a cerviche.
