Chinese Black Bean Clams

Take it from Doc, although this is an involved dish to make, it is well worth the effort and time. It surpasses any of the similar restaurant fare I've ever tried. The sauce portion of the recipe is extremely versatile and can be used with shrimp or chicken and broccoli to name a couple of dishes. Always make doule batches of the sauce and store one batch in the refrigerator for later use. It will keep 2 weeks. Serve it over steamed white rice. This is the Doc's favorite recipe, and is so good, it only serves two in my home!

Oogruk Flippers

I was recently looking for something to do with whale blubber. Honest.

I came across this, full well knowing that Alaska has the highest rate of food poisoning in the world. Oogruk, if you don't speak Inuit, is Bearded Seal. As opposed to plain ol' every day seal. So this is a special occasion dish. Hopefully soon I'll get the recipe for fermented beaver paw.

Full disclosure: I've not made this, nor have I eaten it. YET.
