Slow Cooker Meatloaf

Yes, I make my meatloaf in the crock pot too. But this is easily the moistest, most flavorful meatloaf I've ever eaten - I abandoned my mother's recipe for this one!

Coconut Balls

This is a Everyday Food recipe that has been become a favorite of mine. It makes a very tender, not-overly-sweet, subtle coconut-flavored sweet treat. The rolling of the hot cookie in confectioners' sugar gives the cookie a nice little glaze. **NOTE: I always roll them in the confectioners' sugar again after they're cooled to give them a powdery white coating. I make them several times a year and always include them in my Christmas cookie gifts. Enjoy...

White Sangria-Glazed Grilled Chicken

I miss making this one -- winter got in the way up here and the BBQ is snow-covered. But, that's not the case for some of you, so try this and remind me of how good it is:)
If you like white-wine sangria, with lemon and orange flavours, this one's for you. You have to marinate the chicken for 8 - 24 hours (not included in the prep times) but the chicken turns out very juicy & tender. If possible, get your butcher to prepare the whole chicken as described, but it isn't difficult to do yourself if need be. The chicken is grilled over indirect heat; you need a grill or BBQ that has at least 2 burners and an accurate thermometer either on the lid or hung on the grill. You can also use this marinade on chicken pieces or boneless, skinless chicken threaded onto skewers. ORIGINALLY FROM: Our LCBO's Food & Drink magazine.
