Stuffed Artichokes

This is one dish, I think, the slow cooker is ideal for -- rather than steaming, and w/o the muss & fuss.

Chianti Arborio Rice

The flavor is really delicious, and this dish goes really well with braised or grilled meats. You should use an Italian variety of rice that is specifically grown in Italy, such as Arborio, Vialone Nano, or Cararoli. The broth should be homemade; to ensure the most flavorful results, but if time or circumstances make having homemade broth impossible, use the best canned broth you can find. As for the wine, any decent Chianti red wine works really well.Deborah Mele

Campanelli With Asparagus Basil And Balsamic Glaze

Campanelli is a frilly trumpet-shaped pasta that pairs nicely with this sauce. You can use fusilli if you can't find camapanelli.

Eggplant Rollups Over Spaghetti

This vegetable dish is a different take on an Italian dish. The only thing that keeps it from being completely vegetarian is the cheese. Since I'm not one, I'd have to assume you can find cheese that you can substitute. Enjoy!!

Gnocchi Con Pomodoro Basilico E Olive Gnocchi With Tomato Basil And Olives

The green olives and basil make this dish so very aromatic and delicious. Use as an appetizer to serve 6 or as main to serve 2-3. Use a really good cheese and that will set it off perfectly.

Mushroom And Fennel Bread Pudding

Most bread puddings are sweet treats. I love this because it's not. Filled with sautéed mushrooms, fennel, pecorino cheese, and a light custard that holds it all together, it’s sure to be a hit .

What to buy: Pecorino is a sheep’s milk cheese from Italy. Here I used Gran Pecorino, an aged cheese that can be found at high-end groceries and cheese stores. Do not use Pecorino Romano for this recipe, as it will be too salty. If you can’t find Gran Pecorino, aged Asiago is a good substitute.
Bread pudding can be made a day ahead and brought to room temperature or warmed in a 350°F oven prior to serving.
