Stock

STOCK is the essence extracted from vegetables and or meat that forms the basis of any preparation of food! I love making my own stocks as I find the ready available stocks that you purchase too salty, too strong or no taste at all. This is my basic stock recipe and if I need fish, meat, chicken stock I just add it to this.

Mushroom Tarts

This appetizer was originally printed in one of the first LCBO Food & Drink magazines and it quickly became one of the "Best of a Decade" recipes and re-published in 2003. You can substitute onions for the mushrooms, if desired (I usually make half of each....). The pastry is easy to make, extremely rich, and you can add 1 TBSP (15 ml) sugar is you use it for a sweet butter or fruit tart filling. It requires a 30-minute chill time. These tarts freeze very well; re-heat in a 350°F (190°C) oven for 15 minutes, if frozen, before serving.

Orange Pecan Chicken

This is a delicious chicken recipe that I have made for turkey-haters for Christmas dinner. The sauce gets gooey and sticks to the meat. It is really delightful served with wild rice!

Bean And Bacon Casserole

This is a casserole I used to ask for when I was growing up. I loved the sweetness of the brown sugar and bacon against the savoury flavor of the beans and tomatoes. It really is delicious!
