Make a vodka martini (alas stirred and not shaken) from all the ingredients and roast a side of salmon in it over the grill!  It can also be baked in the oven, of course.  But would that be as adventurous?

1 large salmon filet (1 1/-2 lbs)
1 t. dill weed
juice of ½ lemon
1/3 cup vodka
¼ cup dry vermouth
4 T. melted butter
2 t. creamed horseradish
1 t. crushed garlic
1 t. Tabasco sauce

1 hour before cooking, take salmon from refrigerator.  Rinse and pat dry.  Remove any pin bones with a tweezers.  Put the salmon on a double layer of large aluminum foil sheets. Close it on three sides.  Add the “martini”.  Close the foil tightly. Let stand for 1 hour.

Prepare a wood fire for indirect cooking.

Cook the salmon for 30 minutes with foil closed.  Carefully open the top.  Let the salmon cook for 10-15 minutes longer until sauce reduces.  Serve the salmon with the thickened sauce.  If the sauce has become too thick, melt an additional tablespoon of butter over salmon.
