Eggplant Pomodoro Pasta

Diced eggplant turns tender and tasty sautéed with garlic and olive oil. Toss with fresh plum tomatoes, green olives and capers and you have a simple light summer sauce. We like it over angel hair pasta, but any type of pasta will work. Serve with freshly grated Parmesan cheese and a mixed green salad.

TOMATO SOUP

Once oagain I did not put quantities in as soups I cook according to the availability of ingredients and of course for how many people. If you don't feel like making your own vegtable stock, buy a good quality ready available vegtable stock BUT under no circumstances use cubes!!!! It takes a long time to cook but trust me it is devine and I cook huge quantities and freeze it in single portions.... nothing as nice as having a cuppa for comfort!

Veggie Lasagna

I had this lasagna in Reno, and looked in vain for a recipe. I finally had to dig in and develop one. It's pretty close to the original. It's creamy and full of flavor. Other veggies could be substituted. It could also be a side dish or a perfect buffet item.

Rich and meaty portobello mushrooms over egg noodles. My dinner guest swore there was meat in it. Found this at allrecipes.com
