Naughty Wild Red Rice With Chicken And Mushrooms

It's naughty because one is not supposed to have Red Wine with Chicken or Fish. I adore this dish. If you have leftovers, the Wild Rice pops (sort of like Pop Corn) when reheated & this gives it another great taste.

Chicken Soupstew That Turned East

This started out as a chicken soup with a ton of veggies. Then, I poured Olive Oil into a 3 Quart cooking pot & grabbed Cumin. I put 2-3 Tablespoons of Cumin over the Breasts of Chicken that i was sauteing to give it some color. As I added lots more veggies, I put in 2 Macintosh Apples too. As the Veggies & Apples all sweetened from Sauteing them over Med. High Heat, I added 1 QT. of Chicken Stock & 1 Cup of Cider.
I covered it & turned the heat way down & let it cook for 1 1/ 2 hours. the smells that filled my house made me drool. That's when it hit me, why not give this a little Middle Eastern Twist, so I did.
If my tummy wasn't so full, I'd make another bowl. But I'm going to have to wait until tomorrow.

Humble Pie

Humble pie (deer innards or numble, later called humble) was usually served to the servants, while the nobility ate the venison. Let's just forego the innards, unless you wish not, and prepare a pie fit for everyone because deer is such an abundant resourse in the state of Arkansas! I thought of this recipe because of the admirable, humbleness of Kevin Skinner, winner of America's Got Talent, 2009!

Wild Mushroom Salad

Mushrooms sauteed. No matter what the variety, wild mushrooms should be firm and springy to touch. The sooner they are prepared, the better the taste. Quite easy. Adapted from Idone's "Salad Days" 1989

Wild Mushroom Wild Rice Pilaf

This is a recipe that is easy to make and something different from the everyday rice dish,,, I use short grain brown rice instead of the long grain white rice because I like it better... you can also use an onion or leeks etc in place of the shallots.. the orginal recipe and the photo are courtesy of the Campbell's kitchen
