Amits Goa Curry

For the adventurous chef - NOT your typical Indian dish! Goa is India's premier beach destination, a former Portuguese colony south of Bombay, and the home of some of the best seafood in the country. (Most Indian restaurants in the U.S. serve Northern fare, this won't taste anything like that!) My husband's recipe doesn't have exact measurements, almost everything is to taste. Be careful with the spices, taste as you go, and cook slowly - and you should get a beautiful curry at the end. Besides fish, we have also made it with shrimp, calamari, and even chicken, with tasty results every time!

Cool Mediterranean Cucumber Salad

Ridiculously easy accompaniment to Mediterranean main courses or grilled meat dishes. Make in advance, and cover and refrigerate while preparing the main course, for an extra burst of refreshing coolness! You can also serve it on a bed of fresh baby spinach.

One-hour Sausage And Seafood Paella

My husband and I have been working on this recipe, based on my paella recipe research and his memories of Spanish street food. This is a relatively quick and easy take on one of his favorite dishes. Amounts are approximate and subject to personal taste - except for the rice and chicken stock.

Apple-pear Ginger Chai

This rich and flavorful tea, made Indian style, is a quick and delicious afternoon treat. Sweetened mainly with apple and/or pear slices, it is also low in sugar!
For a reduced-fat option, use 2% milk instead of whole. Skim milk not recommended.
