Betsys Really Good Tuna For Sandwiches

Tuna was something we ate A LOT when I was a kid. I was always making it for myself. After years of preparing it, I seem to have a very set selection of ingredients now, and don't need to try altering it. It comes out yummy every time, and even my husband likes it - who normally doesn't get too excited over tuna. Feel free to adjust any ingredient to your liking. But I don't recommend substituting anything. At least not until after you've tried it the right way first. I am very particular about the tuna I eat and really can't eat it anywhere else because it just doesn't taste right. Enjoy!!

Betsys Asparagus-Mushroom Saute

I just concocted this in my head last night. I was able to get some fresh asparagus on sale at the store, and this turned out to be a tasty treat along side the salmon I had cooked!

Betsys Quick And Easy Artichoke Dip

A really tasty, warm artichoke dip. It really does come together quickly, too. Good with toasted bread pieces, crackers, or even vegetables like cucumber slices or leaves of endive lettuce, or celery (if you avoid bread). After it was gone, I was trying to think of a way to cook some chicken I had and I had an idea that this dip might be tasty as a chicken breast stuffing. Some day I plan to try it in a stuffed chicken breast. Enjoy this yummy dip!

Betsys Red Wine Beef Stew

This is a lower carbohydrate stew. But NOT necessarily ONLY for low carbers. My husband WOLFED it without my telling him that it was a low carb stew. There are no potatoes in it, but I did put in carrots. Don't let the long list of ingredients scare you. You can just chop up all the vegetables while the beef is boiling away, and take your time doing it. I cut everything up and put it in a bowl. Then just dumped the whole bowl in to the pot at the right time. It really is yummy!
