Chicken And Yellow Rice

Another Cuban restaurant, and another traditional in the Cuban communities of Miami and Tampa. Serve with sweet peas over the top. This is how I've always had it, both at home and at restaurants. My parents were not Hispanic, but we certainly enjoyed the Cuban restaurants in Tampa when I was growing up.

Spanish Bean Soup

There was no Cuban cuisine, but this is a traditional soup in the Cuban community is Miami and Tampa. A new friend posted a recipe with saffron, which made me think of this one.

Amandas Apple Dumples

This recipe was given to me by a friend, and when I fixed it my husband could not get enough of it. I have bumped up the heat on her original recipe, and haven't tried it at 400, yet. Her recipe said 350, but the apples and dough weren't done. You bake crescents and apples at a higher temperature, so I think the higher temperature is called for. I may find out it is just an increase in cooking time that is needed. If so, I will re-post.

Iron Skillet Tamale Pie

This is one of about six recipes I want to try in the latest Cooking With Paula Deen magazine (September/October 2007). We fixed it last night and it was wonderful. Everyone loved it (good thing I made a double batch). The little that was left over was good re-heated, too.
The picture in the magazine showed it topped with fresh tomatoes and avocado chopped. I did that, adding a little lemon juice to preserve the freshness and bring out the flavor, and everyone really thought that was great.

Claudias Bacon-Cheddar Potatoes

I was trying a different recipe and the potatoes didn't turn out right (you were supposed to be able to smash them and have them stick together), so I came up with this one on my own. It was an instant hit with my family.

Tinas Broccoli Salad

My niece fixed this several years ago and it was so good. I brought the recipe home with me, but then couldn't find it. She finally sent it to me again.
