Slow Roasted Pork Shoulder

When I lived in Texas I had a house with some land which allowed me to dig a pit for when I had a craving for slow cooked meat. Although I love Chicago, there is no room for a pit in my condo. So, I adapt. I have used this recipe often with various pork cuts, but I think the bone in shoulder gives the best finished product.

The 9 hour cooking time may vary. Try not to open the oven when cooking as this will allow heat to escape. I use a digital probe thermometer to keep track of internal temperature. I have found this is an excellent recipe to leave overnight.
