Tom Ka Gai - Thai Coconut Chicken Soup

This is our favourite soup in the world, and it took me a long time to get it just right. My recipe is stained and torn and smudged and almost disintegrating, so I figured it was time to record it here. You'll find it is a more simple take on a traditional Tom Ka, with some western liberties taken. I also have a great hatred of fresh chilies (sorry!) which is why I use Spiracha.

Artichoke Nibbles

My friend Pam made this for me a few years back and I hounded her for the recipe. These are delicious hot or cold, and can be served as a snack, brunch or lunch (with salad). They also freeze well, but you won't need to because they will dissapear!

Crab And Cream Cheese Wontons

My husband & I have a favourite Thai restaurant in Seattle, WA called Racha Thai. We first had these 'crab delights' when we enjoyed a tasting menu there. I've adapted the concept to make at home (because we can't always drive down to Seattle just for yummy food).

Pearl Onion Trio In Herbed Cream Sauce

I made this as a side for a potluck Thanksgiving tonight. It was well received and very pretty. Goes well with fresh rolls to sop up the sauce.

Sweet Potato And Apple Cassoulet

It's Canadian Thanksgiving this weekend, so I'm adding one of my family's traditional dishes. It took me over an hour to find, so now I'll always know where it is! I should say we've always called it by the title, but have always used yams instead of sweet potatoes. The recipe is in my Mom's own words.

Roasted Lemons

This is currently my favourite way of using lemons. Use them any way you would normally use lemons; serve alongside fish, chicken, vegetables, or use juice in dressings or sauces. I understand in some parts of Italy the lemon is eaten, but I prefer to use the juice.

Grandma Bettys Gingerbread Cake

I'm not a big fan of cake- I know, I'm weird, but this is soo scrumptious! My Mom makes it best, but it's her Mom's recipe. Tastes heavenly warm or cold. Don't forget the whipped cream!
