Lentil Mushroom Red Pepper Confetti

Recently when I made dinner for my husband, I just didn’t feel like eating steak like he was. So I looked in the fridge and came up with this combo, and… oh my. Absolutely delicious! :) I like it both with the red bell pepper and just with mushrooms – I can’t decide which way is my favorite. This dish tastes surprisingly “meaty”!

Chocolate Crinkles My Favorite Cookie

Although these aren't exactly the recipe we used when I worked at Cookies By Design, they taste exactly the same: absolutely wonderful! :) They're amazingly fudgy. *grin* And so easy to make, too! My husband made these last year for his annual cookie tin gifts, and they were very popular. Makes about 72 cookies. These are different from most of the recipes you’ll find for chocolate crinkles in that they use cocoa powder rather than baking chocolate or liquid forms of chocolate.

White Chocolate Chip Cranberry Oatmeal Cookies

I originally made these at the request of my old chorus director John Kelleher, who also worked at Seattle area Starbucks (I think he'd had the combo in a cookie there, once). I was surprised but very pleased they came out so tasty! These days, these are pretty much the only cookies which are requested and I make on a fairly regular basis.

Cold Tea Noodles

A while back I was delighted to find "tea flavored noodles" at a local Asian grocery store - they're a pretty, light green, and I'm planning on making them with a light sprinkling of sesame oil and cashews. Then while browsing recipes at the PCC Natural Market site, I found the recipe below, which wonderful, as well! The recipes stated: "Keep cool by cooking the noodles in tea the night before serving. The next day, assemble the short list of ingredients, and dinner is on the table. Good during cold and warm weather alike, but it's a perfect warm-weather dish."

Perfection Salad

A family recipe dating back to the early part of the 20th century, by my great-grandmother. I have a tendency to think of this as Grandpa's salad, because he always prepared it for us. My mom and sister still make it for our holiday family gatherings, although now we usually use sugarfree Jello. (I've recently discovered that Perfection Salad is not something unique to our family - there are a lot of old recipes on net for it. They're generally similar to the one below.) Prep time doesn't include refrigeration.

Moms Crispy Top Green Bean Casserole

Not your regular green bean casserole, and there's no mushroom soup! :) Mom says: "This year, my daughter Julie and I made a team effort out of making the green bean casserole for Christmas dinner. I had a recipe I'd wanted to use portions of, and together in the kitchen we made created a new twist on the old standard that was really tasty!"

Day After Scalloped Turkey

This casserole is a great use of leftover Thanksgiving or Christmas turkey! Make it and put it into a casserole dish and seal well, then put it in the freezer for a couple of weeks down the line when you're craving the taste of the holidays again. :) It also travels well to potlucks, especially if you use one of those disposable foil casserole dishes! You can even make the bread cubes from leftover rolls, toasted in your oven.
