Hearty 5-cheese Tortellini And Beef Stew

I made this last week as I went along, so some of the amounts may be estimates - like everything I do, I just throw in this and that, not really measuring. You can change it up as you like to suit your tastes. I'm trying desperately to cook for just 2, so you might need to increase the amounts for your family. The pic is what was leftover and I just had it for lunch.

Tart Russian With A Southern Accent

I concocted this "martini" tonight as I was frying my chicken and wanted something different. The pic was taken after a few swallows, so it's a bit "unfrosty" and low. Cheers! (not for the fearful of booze)

Hot Damn Pork Chili

I made this up as I went yesterday with some boneless pork sirloin chops I found on sale. If you like HEAT, you'll love this. Of course it can be made milder, but WHY? LOL I didn't want a whole lot of it leftover, so it's a smaller batch which will feed 3 or 4 depending on size of bowls. Cook time is as long as you want it to be. I kept it simmered for about 3 hours, but in actuality, the pork is done in about 15 minutes.

Nutty Peanut Butter Devils Food Bars

I came up with these today using the cake mix I had on hand and tweaking my Chewy Toffee bars recipe. They are too easy and a chocolatey delight! You can tweak this using any cake mix or combo of nuts/chips to fit your tastes. I don't think it can be screwed up!

Chewy Toffee Bars

Okay, so I bought these Jiffy white cake mixes in the little boxes cuz they were on clearance for 59 cents. Didn't know what I was going to do with them. I don't even eat white cake! But lo and behold on the back was a recipe for these great sounding bars. So here they are, I doubled it and used 2 boxes, so that is how it is written.

Southwest Chicken Chowder

I spent all day yesterday simmering my homemade chicken stock and wanted to do something other than just chicken soup. This is what I came up with. It made a huge batch, but you can reduce the amount of stock/broth to make less. Of course you can use canned chicken broth/stock also! Adjust spice for your taste - we like it spicy! Although this was an all day affair for me I adjusted prep time for just making the chowder itself.

Black And White Cream Cheese Brownies

I found this on Cooks.com and had to make them! They just came out of the oven, so I haven't tasted yet, but if smell is any indication, they're going to be delicious! Super easy too.

Twice-Baked Stuffed Potatoes

This is my microwave "baked" easy stuffed potatoes we had with Pleclares Ultimate bbq Rubbed Chicken last night. I just had to post both of these pics - LOL - check out what the reflection from the under-cabinet lights did on the plate! Smily faces! Hilarious.... Oh, and the potatoes are good too - LOL

Chicken Andouille Gumbo

This is my gumbo recipe I have been making for about 8 years or more. There's a lot of chopping involved, and the roue takes patience, but well worth it in the end. The key to a good gumbo is the roue. Do not attempt on a hot day however, unless you have AC. Enjoy.

Spicy Beef And Cheesy Cornbread All In One

I had some boneless beef short ribs leftover and decided to re-vamp them into this. You can use any meat - leftover pot roast, stew meat, taco meat, chicken, etc.
For the recipe I'll just say MEAT. Quick and Easy - and came out pretty good too!
I just made for two of us, but you can easily double and put in 9x13 instead. Kids love this kind of thing. Mine did.
