Maple Cured Cedar Planked Salmon Or Tofu With Chipotle Glaze And Blueberry Pico

As a special birthday celebration for my boy, here is the main dish of his birthday meal. This recipe is Chef Rick Kimmes of Oceanaire. I made minor changes which I will provide in [brackets]. Being a vegetarian, I made my version by substituting tofu for the salmon. Wicked good. I hope you try this one.

Asparagus And Lemon Cream Pasta

This is a bright and light pasta. It's super easy and quick! It's a great summer dish when you want yummy comfort food. I made this with spaghetti, because I think it stands up to the sauce well, but you could swap in a similar pasta.

Gruyere Sharp Cheddar Shells

This is my take on Ina Gartens Homemade Mac and Cheese. It's so good, but it's a little rich for us - so Ithis version is a little lighter. *Also great with the additon of light herbs, or a smidge of garlic. Do be gentle with either, because the cheese is really subtle and delicious.

Now Thats A Spicy Taco

These are quick and easy. Nothing fancy here. Soy additions are very new for me - so this was a good way to incorporate for a person who is all about texture.

Krumkakes Gruyere Tart Pastry-style

Oh my. Krumkake got me all hopped up to make this after I made my Camembert Leek version. Since I'm a veg, I veto'd the pie sell (most have lard) and the ones without are bleh. THIS TART WAS SO YUMMY. I used a Gruyere Comte for easy melting. I'm so glad I tried it. Thanks Krumkake!

Pasta Simple

This is a staple in our house. It's also a great starting point to do variations on. It's a quick pasta recipe without rolling out your own - which we tend to do. Just a quick trip out to the garden to snip some basil and it's perfect. The steam from the pasta cooks the onions, shallots and garlic just a bit, so if you are looking to tame the bite (which i love) saute elements first which imparts a great taste as well.

Ina Gartens Coconut Cupcakes

These are my favorite cupcakes. (and i am not a sweets person much). They are Ina Gartens cupcakes - but I did them up as minis for a party today - which landed me 60, YES 60 cupcakes. Unbelievable. The only other thing I changed is to replace the almond extract with more vanilla. (not a fan of fake almond) They are moist and scrumptious. Very beautiful.

African Red Pepper Peanut Soup

This soup is really good. I know it sounds kind of bizarre, but it's really different and tasty. You can use veggie bouillion cubes in place of stock if you like.
