This is my healthier version of Matty's Mom's Meatloaf from Ajax Diner in Oxford, MS.  In my recipe, I use ground turkey instead of beef, but if you really want to use beef you can.  Pick your favorite cheese to go in it.  I've used cheddar,  mozzarella, monterey jack, and they all work well.  Even reduced fat cheese works well here if you are watching your fat intake.
