Eastern Fusion Mint Scented Beet Salad

I had fresh mint and wondered how it would go with beets. Then I "discovered" the fresh ginger in the refrigerator...My kids adore warm beets with butter and salt and will eat them cold, with only salt. I had a buncha beets, and wanted something a bit different to amuse myself with.

The prep time is negligible: It's the hour or whatever you need to get the beets soft that racks up the time investment. This particular lot of beets had been left on the stovetop unattended for a bit too long. The pot scorched, but the beets were sweet and sensually soft.

I'm guessing at how many people this quantity will satisfy - the proportions are flexible, as are the seasonings.

Local Colour - Watermelon And Salty Cheese--a Serving Suggestion

At the risk of reinventing the wheel - this is the concept in its simplest form.
Cubes of watermelon and Bulgarit (Bulgarian) cheese is a local summertime favourite at pubs and restaurants in Israel.
Bulgarit is available from 5% fat up, either from cow or goat milk. Like Feta, it's a brine cheese, but I don't think it's as dry or as sour as Feta. Analagous cheeses - sirene and brinza.

One Pot Lemony Chicken Spaghetti Curry

An adaptation of a curry from one of my Mom's chicken cookbooks. Spice quantities don't have to be exact - use a commercial curry or blend your own to control the heat. The last time I made this, I left out all the heat to accommodate my kids. To my surprise - they really liked it!

Potato Kugel Meatloaf

Potato Kugel Meets Shepherds Pie...

Friday afternoon and I'm faced with the dilemma of not wanting to cook a separate starchy side dish and a main dish for Shabbat lunch. I'm not in the mood for straight meatloaf, and don't feel like boiling and mashing potatoes for Shepherd's pie.
But wait -- there's this recipe for a classic potato kugel, and I have a kilo of chop meat!

Brown Sugar Chicken With Or Without Root Vegetables

Easy baked chicken, from a recipe called "Incredible Chicken", off the Web. My version adds root veg to cook in the bottom of the pan - which you can omit if you're planning to eat the chicken cold - because it's great - hot, cold or reheated for Shabbat.

Forgiving and open to variation and improvisation. The quantities are easily adaptable. I use quarters - but you can use a whole chicken, cut up.

Figs Furioso

Fresh figs are insipid on their own.

In a fit of pique, I ruthlessly quartered fresh figs, threw them into a bowl and assaulted them with balsamic vinegar, a drizzle of honey and a pinch of salt.

I would have attacked them with fresh ground pepper if someone hadn't spirited away my special blend of red, green, and black peppercorns.

A handful of sliced blanched almonds and my fury was temporarily appeased.

I could have tossed in some salty Bulgarian cheese, but I didn't feel like it that morning.
