Supreme Enchiladas

These are my famous enchiladas! My family loves them, my boyfriend goes crazy over them, and my friends request them at every pot luck! You can easily sub chicken for beef or go meatless. I've even used ground turkey!

Easy Cheesy Slow Cooker Rice

This makes a great side for enchilada’s or you can grill some chicken and throw it on top once the rice is done cooking. I accidentally discovered this recipe when I tried another recipe with chicken and decided to use throw some rice in the slow cooker. The rice turned out much better than the chicken so I stuck to the rice and the soup mix and I cook the chicken separately now and I use the rice as a side for all kinds of things or a meal of it’s own!

Spicy Thanksgiving Turkey

This is my favorite turkey for thanksgiving. It’s savory and delightful. The onions, shallots, carrots and celery infuse the turkey and the juices in the bottom of the pan with a wonderful flavor. I personally like spicy food – that’s why I use garlic, chili powder, and paprika to make my turkey. The paprika on top also adds a nice coloring to the bird when it finishes. Be sure to reserve all the juices at the bottom of the pan for one great gravy!

Microwave Ready Turkey Cheese Manicotti

The manicotti is assembled then placed into microwave safe, single serving containers. It saves well in the refrigerator and freezer. My boyfriend and I try to make meals that we can just grab and heat, which aren’t too expensive, and which taste great. This is one of those recipes. Seeing how we’re both working full time and are students at night it’s important for us to be able to eat well and have it ready fast.
