Uber Delicious Potato-topped Chilli Con Carne

I would describe this as a randomly delicious and super HEALTHY main course - a chilli con carne type dish - full of flavour - with fine steak pieces instead of mince, and crispy potato mash topping instead of rice. It happened to come with a bottle of Mcilhenney's tobasco sauce i bought, and i was intrigued. What can i say...it worked!

Amazing Guacamole From Costa Rica

This dish is seriously healthy and really high in good fats (monounsaturates) - great for the arteries! I learned how to make Guacamole in Costa Rica - I know its a mexican dish but hey maybe this is the costa rican twist! My family are scared of weird food - but love this! This Christmas I made a big bowlful and served it with crackers (hummous and pate too) to all my neighbours who came over - and they polished it off. Irish people surprise me at how open they are to new tastes (....sometimes, more often it is "give me a potato!").

Half the quantities for a small bowl perfect to last you a day or two!

Kickass Spaghetti Bolognese

This recipe is from a traditional italian recipe book and SO MUCH TASTIER than those store bought sauces. Nutmeg gives the sauce a tasty twang. I make it all the time and my family love it - so i guarantee its worth trying it! It takes a little time, but do it once and it comes easy to you. the ingredients are all non scary and you probably have them anyway! The meat sauce can be used to make a lasagne that is really good too, by layering with a bechamel sauce and lasagne sheets (sauce butter flour milk nutmeg, stir together over stove). Hope you like! Recipe book is hamlyn classic italian cooking 1998.

Chicken Chow Mein A La Low Fat

I make this dish on a friday or saturday, it's like take away food without the horrible grease and fat. and its much tastier. I think the broccoli gives it the best crunch and the garlic is so tasty (not too good for kissing though....!) I had to submit this recipe for a college project with the contents analysed - it has 417 calories and 12g of fat per portion including everything.....now that is really good. the recipe is originally from the bbc 101 low fat recipes book.
