Vegan Banana-date-walnut Muffins

This recipe is adapted from Fat Free Vegan Kitchen with some tweaks here and there.

These muffins require no added fat to make, and gets it's moistness from mashed bananas & applesauce. A special sweetener called agave nectar is also used. Dates & walnuts add a special touch to complement the banana!

They turned out tasting incredibly banana-y! The texture was on the gummy side- due to a lot of factors. For one I did not follow the given recipe exactly, I may have undercooked them, and also maybe putting the batter directly into the muffin tins is better than using paper liners. But the flavor was still amazing!

Most importanly, these are healthy, low fat & vegan!

Nutrition for 1 muffin: 141 calories, 2.1 g fat, 0.2 g saturated fat, 173 mg sodium, 122 mg potassium, 30 g carbs, 2.5 g fiber, 11.3 g sugars, 3 g protein

Vegan Low-fat Walnut Brownies

This is a recipe from Bryanna's Vegan Feast Kitchen.

It is a very low fat brownie recipe that is vegan & delicious. The oil / butter is substituted with tofu, and a vegan powdered egg replacer is used.

The texture is not dense or fudgey like a regular brownie. Instead it is spongey & springy! Really light texture, yet the flavor is still super rich & yummy!

My family loved it, and I never told them they were eating vegan brownies!

1 serving has 126 calories, 2 g fat, 190mg sodium, 27g carbs, 1 g fiber, 18 g sugar, 2 g protein.

Low Fat Zucchini Mini Loaves

This is a low fat version of zucchini bread, using only 1/4 of oil for quite a big batch, and making up for the lack of oil with pureed apple and banana. These loaves are dense & very moist- absolutely delicious when eaten right out of the oven. The whole wheat flour makes this bread very hearty and healthy!
