Pegs Strawberry Shortcake

This is a great easy shortcake topped with strawberries and blueberries then covered with half and half. (Oh I know it's over-the-top but how many times do you have strawberry shortcake in a year?) Any milk is good too, the half and half is just better. The cake is spongy and the top is sweet and slightly crisp.

Crispy Apple Crisp

I made this today and it really is our favorite crisp recipe. I've tried others just to see if I can top this one and this really is the best. The topping is crisp and sweet and the apples are moist and tart. A scoop of vanilla ice cream is always a great addition.

Homemade Tater Tots

Made these tonight and yummo, they were delicious. It sounds like a long process but I made these first and while they refrigerated, I made the apple crisp and chicken. You might think "why would you make homemade tater tots?" Try em and find out!

Grandma Ballards Banana Nut Salad

This is my granmother's banana salad recipe that I have never seen in print anywhere. This is truly a family favorite and much anticipated when it's on the menu. It isn't like the vanilla wafer banana salad and is just really delicious to have a time or two a year.

Chipotle Dipping Sauce

After tasting BBQ Pork egg rolls with chipotle dipping sauce in a resaurant, I decided to make them at home. It's one of our favorite "treats". My BBQ pork egg roll recipe is on here and this is the sauce we use for dipping. It's also good for dipping sweet potato fries.

Pegs Italian Meatballs

After reading dozens of meatball recipes I threw these together today while I was babysitting my grandson. My daughter has called me three times to tell me how good they were....and she's not a real meatlover! So I thought I'd better jot down the recipe so I can make them the same way again. I recommend the crockpot, although I'm sure they'd be just as good simmered on the stovetop.

Mini Crescent Cinnamon Rolls

I found this recipe on Pillsbury.com this weekend and whipped up a batch before my weekly visit with a friend. Her husband always asks me, "Where are the doughnuts?" We ate all 20 mini-rolls between the 3 of us! They were so good for so little effort.

Hot Shredded Chicken Sandwiches

These sandwiches are great for family reunions, potlucks or fundraisers. After heating them through, I usually put them in a crockpot to transport and then heat them on low. You can add a little chicken broth if it starts getting too thick. I remember making these for my daughter's post-prom years ago and all the kids preferred these over the ones another mother made. She slaved for hours with whole chickens, celery, onion, etc. These take about 20 minutes from start to finish.

Jiffy Chipotle Muffins

I got this idea from Chef Elaine's recipe. Using the Jiffy mix makes it so easy. No measuring really. Just toss everything in and it was really very tasty, especially with my Mexican Chicken Bake.
