Fried Tomatoes

Mom's use of those not so nice winter tomatoes when they aren't very flavorful unless made this way. Served at breakfast with cheese grits and sliced bacon.

Potato Soup With Dill

Momma makes this just for me because I love it so. Finally made her measure and now I'm giving it a go on my own. Cheap and easy. It is even good leftover cold

Citrus Madeleines

From Cake Mix Cookies by Camilla Saulsberry - found my mom's old madeleine pans and decided to give this recipe a whirl. I messed it up horribly, they were flat little tough nothings. I'm determined to give it one more try and I'll post a pic if I succeed.

Lemon Snowflakes

Lemon Cookie from a cake mix, really easy and quite yummy. Good for a novice if you remember to check when the timer goes off and you don't burn them all. From my small groups leader at Church, we make cookies for fundraisers.

Peppermint Patty Pinwheels

A better cookie than the storebought dough with food coloring that I made into candy cane shapes last year. Flavor is much better and as long as you chill the dough, the cookies can look like a pretty pinwheel. I like the extra sugary glze but some people may be nervous about the egg white. The pastuerized egg whites are pretty good and the leftovers make a great egg white omelet the next day.

Cheap Ham And Bean Casserole

Serves three college kids. Home-style kind of casserole, made with what was on hand and it is kind of yummy and cheesy gooey to satisfy what ails you. Homesickness!

Lemon And Goat Cheese Dressing

I'm late to the game on liking goat cheese but a friend made this dressing and served it over mixed greens with lots of cucumbers, cherry tomatoes, and chopped green onions. It soaked into the croutons beautifully and they became altogether something different. Yummy.

MOMS DEVILED HAM SPREAD

Mom has a collection of Gourmet magazines that rival my Dad's collection of National Geographic, I think. It must be 14 years worth of saved magazines. I'll admit she has fun looking through them. This is one of her favorite recipes and mine too.

Think Outside The Box Mac Amp Cheese

My friend shared this with me after she saw me eating box after box of the blue stuff. She says she got this from More Bear Cookin' by PJ Gray.
I find it easy. I even add mixed veggies and a can of tuna and have my own tuna casserole.
