Waterless Mashed Potatoes

I saw this recipe in a magazine at a Dr.'s office. Unlike other people...you know who you are, I did not cut the recipe out of their magazine, and was left to remember it as best I could. The concept is to cut out the water used to boil the potatoes, which waters it down, hence, a more concentrated flavor. So far so good. Tweak it to your liking. It is very quick, easy and versatile.

Very Different Stuffed Zucchini Boats

I needed a new twist on stuffed zucchini/zucchini boats, because you can only have the beef and rice mixture so many times. This is what I came up with. I think I will try it for stuffed peppers too.

Tuna Salad With Veggies And Lemon

This recipe allows you to get a few veggies into a tuna sandwich that tastes much different than your usual tuna. You can increase the amounts in this to suit your serving needs. Use whatever mustard you like, throw some lettuce on the sandwich, and you might be closer to that daily allotment for your veggie intake. I think it tastes good too.

Cottage Pie Aka Shepherds Pie

You can make this dish any size you choose, and alter the veggies or even the meat type. I discovered through my Dad, that Shepard's Pie uses Lamb, Cottage Pie uses Beef. I don't know what you would call it if you use Poultry! Any Suggestions?

Reindeer Food Recipe For Christmas Eve

I just heard of this idea last year, from a new neighbor, but they bought it in a store. I went o/l and had none of the ingredrients in the house, but needed it now. So I used what I had. Granola, Cereal, Dog/Cat food etc., anything a squirrel would eat up. It worked, a new family traditon, best of all for free.
