Spiced Rubbed Porkchop Tacos With Bleu Cheese And Cranberry Salsa

I created this dish using leftovers from a porkchop dish. Tacos are one of my favourite foods and are incredibly versatile. Despite this daunting ingredient list, everything is quite simple and quick to throw together.

I got the spice rub mixture from an Emeril recipe, and the salsa recipe from a health food store display in a small college town in Virginia while visiting a friend. Somehow in my mind I one day combined all these elements to make a delicious pseudo Mexican recipe.

Of course the salsa can be made up to 48 hours ahead and is better for it, allowing the flavours to steep and meld. The pork is also quite good if made 24 hours ahead and allowed to chill.

Perfect Lemon Tart

This is the perfect lemon tart recipe, my cooking mentor gave this to me. It's perfect with a delicate crisp layer that forms on top, with a creamy and bright lemon interior, and a buttery, almost shortbreadish, crust.(make sure you work as cold as possible for the maximum flakiness) yum.

Macadamia-maple Sticky Bars

Since my boyfriend is now without me in Arizona, I am always looking for baked goods I can make to send to him. This is a delicious cookie. It is perfect for fall, it also seems as though it would make a great Christmas cookie or gift. Very easy to make, as you only bake the crust, then mix the filling in a saucepan stovetop, spread it over the prebaked crust, and let them cool. I personally like to double this recipe.

It does include maple sugar in the ingredients and without it, the taste changes completely. I ended up ordering mine from King Arthur Flour's Bakers Catalogue. It's a little pricey, but worth it.

I've also been able to skip using parchment without any ill effects.

Black Pepper And Lime Oven Fries

This is from Heidi Swanson's awesome blog http://www.101cookbooks.com she has a cookbook coming out called 'Super Natural Cooking.' I've read her blog for awhile and this is the first recipe I've tried. It's so easy and tasty. Great for an easy snack or side at summer grill outs. The provided photo is also from Heidi's blog.

Spaghetti With Creamy Egg Proscuitto And Arugula

This recipe was one I got in NPR's 'The Splendid Table' Weeknight Kitchen e-newsletter. I can no longer find it on their site, which is too bad because we used this as a side for some herb crusted rack of lamb and it turned out very successful. It is definately a backseat sort of dish and I wouldn't reccommend serving it with anything too heavy. While it is creamy and rich feeling on the palate, the flavour is delicate and light.

Date Quick Bread With Pecan Streusel

This is a great breakfast/brunch bread for winter. It is pleasantly sweet, but not too much so and very dense and moist. I personally add two egg yolks to the suggested egg count.

MAKE AHEAD The loaves can be wrapped in foil and stored at room temperature for up to 3 days. To make a larger, single loaf, use a 10-by-5-inch metal loaf pan, reduce the oven temperature to 350° and bake for 55 minutes.

Found in the December 2006 issue of Food and Wine
