Luisas Roasted Butternut Soup

Our own foodie, Luisascatering gave me this recipe for Thanksgiving this year, and it was just delightful! I served this soup in mini-martini glasses, having seen Luisa's picture of her Chilled Minted English Pea Soup. It got rave reviews by the adults in the family (let's face it, kids and squash don't really go together)! The presentation was very impressive thanks to Luisa and I promised her I would post her delicious recipe and the pictures my daughter took. They say imitation is the sincerest form of flattery, so Luisa surely must feel flattered!

Gluten Free Double - Pumpkin Pie

A crunchy sunflower seed, pumpkin seed and almond crust provides a hearty base for the rich and creamy pumpkin custard filling. You'll never miss the gluten or the doughy pastry! This is equally delicious frozen - one of my friends prefers it that way!

Fat-free phyllo dough layers encompass deliciously yielding, gently spiced apple chunks for a guilt free indulgence that looks spectacular! Very light on the fat and calories, using only a light spritz of canola oil between the dough sheets instead of the butter.

Possibly The Worlds First Ever Dessert Pumpkin Soup

I wanted a sweeter version of pumpkin soup to serve as a pre-dessert but my internet search and a review of my personal library/archives yielded nothing! So here it is, warm and creamy, reminiscent of the pie, but the roasted pumpkin is the real star here.
