Cubes of watermelon and Bulgarit (Bulgarian) cheese is a local summertime favourite at pubs and restaurants in Israel. 
Bulgarit is available from 5% fat up, either from cow or goat milk. Like Feta, it's a brine cheese, but I don't think it's as dry or as sour as Feta. Analagous cheeses - sirene and brinza.</description>

		<title>Bulgarian Homemade Sausages Tchevapchitchi</title>
		<description>Thanks to the East European Folklife Center, I saw this posting of a recipe from The Balkan Cookbook, published in Belgrade in 1987. Cevapcici are a delicious homemade meat specialty from the Balkans that vary slightly from region to region. The basic ingredients are minced/ground meat, salt, pepper, and oil, and sometimes onion (optional depending on recipe) and other spices. I am posting all the variations; here you see the one from Bulgaria. These ones are a larger size than most versions of the sausage.</description>
