Carribean-style Black-eyed Peas

This has quickly become a favorite. I make it a couple times a month. I tried using dried black-eyed peas in the crockpot after soaking them overnight and it didn't work at all; when the beans were finally "done" everything else was close to burnt. But I have successfully used dried peas, cooked them for a couple hours on the stove top and then in he crockpot. And of course, three cans of the stuff works just as well. =P

Spicy Mashed Boniato

Boniato, also known as batata in the Spanish-speaking Caribbean, is a tropical sweet potato. The boniato resembles other potatoes in size and shape and it has white flesh and a deep pink to burgundy colored skin. It is not quite as sweet as the orange sweet potatoes used in the United States. Boniato can be found in most West Indian and Latin markets.

Mangu

This recipe is a typical Domincan breakfast staple. My family loves this stuff not only for breakfast but anytime. The Mangu is almost like a mashed potato, consistancy but with olive oil, garlic and diced red onions, served with Salami.
