Squash Pie From Farm Journals

Squash pie has more flavour than pumpkin...great in the fall especially for Thanksgiving. I used hubbard or the dark yellow variety of squash

Chicken With Roast Vege And Minted Cous Cous Salad

This is a middle east inspired cous cous with chick peas, mint, garlic and roasted veges. I serve this with lightly floured and pan fried chicken breast. It's very tasty healthy.

Salmon Chili

This is the best chili I've ever had. The flavours are complex, but it's not difficult to make. See pictures (and where I got the recipe) here (It's a great site...check it out!): http://www.weheartfood.com/2008/06/salmon-chili.html

Ntomatokeftethes Tomato Fritters

This Greek , traditional , authentic , simple to make , perfect tasting , hungerhealing appetizer will blow your mind away .... Its origen is from the island of Santorini or Thyra , Cyclades Islands Complex , Greece . The original recipe needs Santorinian "tomatinia" ( a species of very small sized tomatoes , due to minimal irrigation because of water being scarce in those years ) and a Santorinian type of cheese . I have used regular tomatoes and Feta cheese for ease purposes ( shame on me .... ) . You fellow Chefs can use Italian pommodori and Italian Pecorino cheese as substitutes which will be the closest you will get to the original . Best enjoyed with some Vinsanto Santorinian wine while watching the world famous Santorinian Sunset ( voted internationally as the Most beautiful in the
world , for more than 25 times ) !! I have pics of it under my avatar , chech it out .... Enjoy people ..... !!

Varkoules Feta-pepper Boats

This interesting , Greek , authentic , traditional , veggy , light , summer time , easy to make , simple dish , with a taste to remember , is an alternative if you dont have time to prepare Yemista , if you want something lighter ...There are many ingredients that you can add to this recipe but I prefer the original recipe. Its origen is Smyrni ( today being named Izmir ) , a sea-side city on the eastern shore of the Aegean Sea ( Turkey today ) . When those thousands of Greeks were violently forced to leave ( murder , rape ) , they brought many recipes with them . This is one of them !! It can be an appetizer , a second course or a main dish . They normally had it as an appetizer
