Old as the hills, fava could be found in public taverns since time began, where it finally made a triumphant entrance to the living rooms of the 'well to do'. Such is the mystery of the delectable fava, that tracing its origin has become an impossible that its name originated from the word "favus" which the Latin word for the broad bean. 
It is known that the fava dish was originally made with the broad bean. And that much later on, the broad bean was replaced with an easier version, the yellow shelled lentil.

Particularly tasty, (and hard to find as well as expensive) is the fava of Santorini, used by the locals as Italians use pasta. We are talking about a basic food which is served is various different ways, depending on the time of year.
Summer fava is made with red sauce capers and is named 'married'. Winter fava is sauted with fried 'kabourma' (smoked pork).

I love them.Love the texture, consistency and most of all the fact that they have the ability to absorb a whole load of flavour.
I decided to use them in this recipe because I knew they would absorb the sweetness of the tomato sauce and the saltiness of the tuna, complementing the two and adding extra texture.
The olives are added for extra flavour and texture but they are entirely optional as I know, not everyone loves them!</description>

		<description>I made this dish on pure culinary instinct. No recipe, just experimenting with flavours.
It was a case of 'what's left in the freezer and cupboard before the monthly food shopping trip'

I found some Stewing beef, broad beans, carrots, onions and this was the result 3 1/2 hours later.
Tasted really delicious too.

Did something I hadn't done before-Coated beef in a mixture of light flour, crushed garlic, salt, pepper, paprika and refrigerated it overnight.
The result was excellent and not only did the seasoning flavour the meat but if also tenderised it beautifully, ready to cook in the casserole.</description>
