Cabbage Salad With Peanut Dressing

This recipe gets tons of compliments every time it is served, without fail. It’s a perfect way to dress up raw cabbage; simple, yet it lends itself to countless variations depending on what you’ve got on hand.
I use a half of a head of cabbage for 3-4 people, a whole cabbage for 5-10 people, and add a bit more from there depending on the crowd. Other ingredients you can add to make the salad larger include pineapple, finely chopped broccoli, shredded carrots and red onion. To make it a meal you can add cubes of tofu or chicken.

Mango Chicken And Cashew Pizza

This is a fun take on pizza. You can substitute sunflower seeds for cashews or add bacon... I make it with gluten free crust and home made sauce but I'v done it with store bought and it worked out great. It's one of my favorites!

Impromptu Chicken Stew

Here in Japan I am finding things to make that are just for me - you know, single serving dishes, maybe with left-overs for lunch. I threw this together tonight and it was really yummy!

Rocky-road Fudge

This is an extremely easy fudge recipe that can be adapted to your tastes. I like it with mint, but butterscotch is great too! Could probably be done in the microwave! Recipe from my friend Velma's grandmother!

Shoo-Fly Pie Crust

This is a pie crust from my grandmother that women made for years! The secret to this is to NOT handle the dough any more than you have to. The less you touch it, the flakier it will be, otherwise you end up with tought dough.

An Instant Grits Starter

We save those leftover packets of powdered cheese that come in those mac and cheese boxes. They are useful for any number of uses include adding to grits. That, together with other seasonings and/or spices can yield a whole panoply of flavors. Use your microwave to cut time. AND THE SUGAR IS OPTIONAL!
