Lumpia

This dish is a little labor intensive but a labor of love. It's all worth it in the end. This recipe can easily be stored in the freezer after prepared and lumpia can be fried a few at a time. Note: they don't have to be fried 1st before freezing. Lumpia wrappers can be refrozen due to there thin-ness. Please realize this is a huge batch (I cut it down to 1/2 just to post this). Never made a small batch because the meat filling is used in another recipe. It's an awesome dish, very addicting. We serve with Siapoa, Tatsuda, Stir Fry veggies and Rice.

Pasatini

This is a recipe passed down from my grandmother to my father and then to me. The most important thing is that you get a large soup pot, place a chicken & water in it and allow the stock to get rich by simmering. The dog got the meat ! The pasatini are cooked right in the broth. They swell to perfection with the glorious broth . A bowl of this soup is nirvana, at least for me! Really don't know servings...

Eggplant Rolatini

This recipe is from Dom DeLuise's cookbook entitled "Eat This It Will Make You Feel Better". Preparation is much easier working in tandem as the frying and rolling can most easily be accomplished at two work stations. However you decide, this is a tasty dish which we usually serve with a side of pasta or tomato risotto.

Italian Rice Bomb

Here's the deal...Company is coming and you want to make an Italian meal. You're tired of the standard and mundane fare. What to do? Bomb! Rice bomb that is. This is impressive in looks and flavor. A rice ring covered in ham, with a savory beef rugu (almost ike a Bolognese with porcinis in it). It is a dish from around Parma, Italy so you know it has Parmesan cheese in it too. It is labor intensive but if the company is worth it, so is the labor involved. What the heck, you and your family are worth the labor, so indulge yourselves for a change.

Pistachio-crusted Chicken With Coconut Chili Ginger Sauce

Chef Art Smith prepared this dish for Oprah's Legends Ball in 2005. If it is good enough for Oprah's taste then it was good enough for me to try. By the way it is beyond FABU.

Mansaf

This is a very popular Levantine dish. The flavors are wonderful, and as mansaf means "explosion" in Arabic, you will find that the way it is served looks like an explosion! Use the Bharat spices recipe I have posted to flavor the yogurt sauce.
