Sweet Potato Croquettes

These sweet potato croquettes were my grandmother's answer to sweet potato casserole at Thanksgiving. These are crunchy and delightful and then you get to the inside and they're gooey with this big hole where a marshmallow used to be! Really good!

Lobster Stuffed Beef Tenderloin

So you slice the beef tenderloin and there in the middle is a lobster medallion. It's very pretty and so good. Needless to say, this is an expensive dish to prepare, so we use it once a year for our Christmas Day!

Chinese Black Bean Clams

Take it from Doc, although this is an involved dish to make, it is well worth the effort and time. It surpasses any of the similar restaurant fare I've ever tried. The sauce portion of the recipe is extremely versatile and can be used with shrimp or chicken and broccoli to name a couple of dishes. Always make doule batches of the sauce and store one batch in the refrigerator for later use. It will keep 2 weeks. Serve it over steamed white rice. This is the Doc's favorite recipe, and is so good, it only serves two in my home!

Mocha Almond Zebra Torte

This layer cake is an all-day affair, but worth it. Rather than horizontal layers, it has vertical layers when you cut it! Aside from eye-popping, it is so delicious. I've made it for company and it always gets gasps when I serve the piece - and the gasps continue until i serve the last piece.
