Bok Choy Kraut

This is my version of the classic Korean dish kimchi. It has a more approachable flavor combo, unlike the crazy-hot combo of garlic, ginger and hot peppers of the Korean version. Rave reviews so far.

Skinless Kimchi Dumpling Soup Kimchi Mandu Guk

These dumplings are not only low in fat but also loaded with flavors. I got the idea from meat ball. Why Not with dumpling!!! I made them in round shape like meat ball, roll into the flour and kept them in the freezer. My husband's favorite soup because he doesn't have a feeling of fullness after a meal.

Kimchi Chigae Or Fermented Chili Pepper Cabbage Soup

The first time I had this delicious soup was about a month ago at a Korean restaurant called Seoul Garden in Maitland - see My Places and expand the pictures - great place! This Kimchi Chigae is loaded with flavor thanks to the pork belly and kimchi and it has various levels of heat going on. Seoul Garden served it in a stone pot and it was still boiling when placed on our table. We ladled it out ourselves and added the white sticky rice that accompanied. Wow - we were blown away by the seemingly simplicity of ingredients, yet the complexity of flavors. So, of course, I set my course to try to recreate this soup and ended up pulling a darn close replication out of my culinary cap. This popular Korean soup could be made with beef, chicken or seafood. Or you could omit the meat altogether - it's your choice. This soup really has it going on - it delivers – enjoy.

Kimchi Stew With Pork-kimchi Chigae

Kimchi Chigae is especially closely related with the life of ordinary Korean people. Virtually every home has its own recipe for the broth. Some use simple water or add anchovy for base soup, while others prefer bone soup which is boiled for days. Pork is the usual meat but some people like tuna instead of pork. What decides the taste of a Chigae is kimchi. Well-fermented kimchi is the best.
