Apple Walnut Loaves

Leah Koenig's family recipe: usally made for the Jewish Holidays, moist, hearty cake also works really well poured into muffin cups. If you prefer to serve it as a healthy breakfast or brunch cake instead of dessert, replace one cup of flour with whole wheat flour and fold 1/4 cup finely ground flax seeds into the batter along with the apples and walnuts. A great fall apple recipe.

Olive Oil Cake

Bon Apetite, from Manhattan's Abraco Coffee Shop comes this readers request for this sweet, olive oil flavored loaf. The ingrdients listed were oganic but I adapted and used what I had in the cupboard!
After I tasted it, i think next time some finely chopped nuts or dried fruit ( ex dreid cranberries ) may be a nice addition to the recipe

Variety Cranberry Mini Loaves

I love to make these and freeze and give for the holidays. May keep in foil pans for gift giving or simply wrap in foil , frost if desired when serving.
Variety: use apple cider for the liquid and chopped apples instead of cranberries. Or blueberries are nice too! ( I freeze them over the summer to use in winter )
Add different nuts if desired or currants.
These are easy and can be baked in muffin tins instead of loaves!

Mini Meatloaves

Traditional meatloaf is made with ground beef, pork and veal; this recipe replaces the veal with ground turkey for a tender, flavorful and leaner version of the classic. Baking individual portions in muffin tins speeds cooking, standardizes serving size and produces a moist, delicious main dish.
