Fancy Orange Slice Cookies

From the 1999 Woman's Day X-mas edition, these are, hands down, my one must have X-mas cookie. They are so beautiful & provide such a pretty contrast when piled on a plate with a variety of X-mas cookies. They can be stored airtight up to 4 days at room temp. or frozen for 2 months in freezer. Hint: These are perfect in spring or summer, served with a scoop of granita, lemon ice, or light sherbet.

Brunch Strata

I love this if I have overnight guests. Makes breakfast so much simpler this way.I simplify prep by buying Italian sausage in bulk when it is on sale and then removing it from the casings and frying them up. I then chop them finer and put them into serving sizes and into the freezer.

Leek Ham Gruyere Brunch Casserole

I love breakfast or brunch egg dishes that can be made the night before, ready the next morning to pop in the oven and serve fresh and hot to family and friends. I just tried this recipe today for Father’s Day, and we enjoyed it very much. I like using French bread (I think if holds up so well in the egg soak), and ham and gruyere are always a favorite of mine. So this combination, with the addition of the sautéed leeks and fresh garlic, was a winner for us. I found the recipe in a grocer’s produce department - I’m sure glad I picked that one up!

Tomatillo Chicken Enchiladas

A "Favorite Recipe" winner from Houston Chronicle in 1992. My family BEGS for this dish...It's time consuming (for me - I'm lazy) so I don't make it often. Speaking of lazy - heated Mrs. Renfros Jalepeno Green Chile sauce will work instead of tomatillo sauce - but it's just not the same.
