Fish In Foil

This dish calls for a bit of preparation but the vegetables can be made ahead and the dish assembled just before cooking. Serve with plain boiled potatoes. Only use fresh vegetables, not frozen.

Bean Squash And Spinach Soup With Fresh Herbs

The most outstanding thing about this dish is how incredibly easy it is to make. I made it for the first time tonight, and I found it filling, hearty, and very tasty, although, I'll be honest, I wasn't bowled over by incredible flavor or originality. What did floor me, however, was how incredibly easy this was to make, and how what little mess it made was easily cleaned while letting the soup simmer. I am in perpetual pursuit of the weeknight recipe that results in a dish which is vegan, doesn't contain soy or wheat, contains a good amount of protein but also gets your veggies in, doesn't call for too many exotic ingredients, doesn't use every dish in the house in preparing, and cooks up relatively quickly. This recipe suits my requirements to a "T"!
