The same dish can be made with spinach ether frozen or canned in place of the zucchini. You just need to make sure the spinach is well drained. This recipe will make enough for two. For larger groups just add more I don’t use more then two eggs regardless of how much I make. This is an “about” recipe all ingredients are about that measurement this is the first time I have put down exact measurements for this dish.</description>
