Moist Fruity Nut Bread

Found and modified from a recipe at Kate in the Kitchen (http://cooknkate.wordpress.co
m/2008/12/22/national-date
-nut-bread-day/) who found it at AllRecipes. I've done it both with and without the added sugar - it depends on how sweet your dates taste and how big your sweet tooth is! Let it stand (unwrapped, if possible) at room temperature to decrease the "sticky" factor and soften the nuts a bit. Definitely avoid plastic bags though... they will breed mould like crazy!

This is delicious warmed for breakfast over the week too.

Macadamia-Oat Snowballs

Another winner from the 2008 St. Petersburg Times Cookie Challenge. We are big fans of the macadamia nuts and it elevates this cookie to extra special Christmas status.

Pecan Pie

Nephew John ALWAYS needs to have a "to go" pecan pie whenever he visits. He deems this to be "the best I've ever eaten". Quite a compliment from a gourmand like John!

Honey Almond Macaroons

A delicious not-too-sweet version of classic French-style almond macaroons made with fragrant orange zest and honey. Make your own almond flour by grinding whole raw almonds (easy to do in a blender or coffee grinder) for even better flavour and nutrition. I absolutely love these cookies!

Chocoberry Cake

Don't go for this one if you're looking for diet food... though it's eggless, it's not the boon of the healthy generator! You've been warned! I reccomend Sweet Strawberry Icing by Suzalleogram (http://www.grouprecipes.com/26813/sweet-strawberry-icing.html) for this cake too :-D. Do I hear BBQ?
