Black Bean Fritters - Culinary Communion

We made these at our "Fish ID" class at Culinary Communion, served alongside the Chiptole Chile Glazed Salmon, and clams, mussels, and other wonderful foods. The fritters were my favorite recipe of the evening! :) Posted with permission. Although they're wonderful with dinner, I have to admit that I enjoy them as leftovers even more for breakfast. *grin*

Peppered Calamari

This recipe - which works as either a main dish or appetizer - is a result of combining some different "Salt and Pepper Squid" recipes that I hadn’t made before. I was aiming for the taste I’d had in a Seattle sushi place, but didn’t quite achieve it. On the other hand, my husband and I loved these anyhow, so I decided to write up the recipe so that I – and others – can duplicate it in the future. These are as good (and usually better) as any calamari I’ve gotten in restaurants! The first time we made them we gobbled them down so fast that I forgot to take a photo... :) We go squid jigging in the Puget Sound a lot in the fall, and this is our favorite way to prepare them.

Emerald City Martini

I came across this drink at the Dragonfish Cafe in Seattle, and had to ask the waitress what was in them... now I enjoy them at home, too. It's a beautiful emerald green color! Although I don't drink alcohol anymore, I can still appreciate the memories. :)
