The Breakfast Jackeroo Sandwich

My boys loved the "Breakfast Jack" sandwiches from Jack In The Box. As simple as this recipe is, this is my version of the basic Breakfast Jack. You can make this in under 10 minutes so there's no excuse not to feed children a healthy breakfast. These can be wrapped up in paper towels or aluminum foil and taken to school. You can eat them in the car on the way to school or packed away in lunch boxes. Since the egg yolks were cooked "hard, " the sandwiches are not messy at all.
